Sushi Chef

We are seeking a talented and experienced Sushi Chef to lead sushi preparation and contribute to the successful operation of a fast-paced culinary environment. The successful candidate will be responsible for developing innovative menus, creating high-quality sushi dishes, managing food production processes, and maintaining exceptional food quality, presentation, and safety standards.

Key Responsibilities

  • Develop and plan creative sushi menus that meet customer expectations and business objectives.
  • Prepare, present, and serve a wide variety of sushi dishes while maintaining the highest quality standards.
  • Establish recipes, portion controls, and food purchasing specifications.
  • Coordinate, execute, supervise, and evaluate all food production activities within a fast-paced kitchen environment.
  • Ensure consistency in food quality, taste, presentation, and service delivery.
  • Monitor inventory levels and assist with food ordering and stock control.
  • Maintain strict compliance with food safety, hygiene, and sanitation regulations.
  • Assist in managing daily kitchen operations and support strategic operational goals.
  • Train, mentor, and guide kitchen staff on sushi preparation techniques and quality standards.
  • Minimize food waste and implement effective cost-control measures.
  • Collaborate with management to introduce new menu items and improve operational efficiency.
  • Ensure all kitchen equipment is properly maintained and utilized safely.

Requirements

  • Relevant tertiary qualification in Food and Beverage Services, Culinary Arts, or a related field.
  • Minimum of 5 years’ progressive culinary and kitchen management experience.
  • Proven experience working as a Sushi Chef in a restaurant, hospitality, catering, or fine dining environment.
  • Strong knowledge of sushi preparation techniques, ingredients, and presentation standards.
  • Experience managing food production in high-volume operations.
  • Understanding of food safety regulations and industry best practices.
