We are seeking a talented and experienced Sous Chef to support the Executive Chef in delivering exceptional culinary experiences within a fast-paced and professional kitchen environment. The successful candidate will play a key leadership role in food preparation, menu development, kitchen operations, team supervision, inventory management, and maintaining the highest standards of food quality, presentation, and safety.

Key Responsibilities

Food Preparation and Presentation
  • Collaborate with the Executive Chef in planning, preparing, and delivering high-quality meals.
  • Oversee daily food preparation and ensure consistency in taste, presentation, and portion control.
  • Contribute to menu development by introducing creative and innovative culinary concepts.
  • Ensure all meals are produced efficiently, cost-effectively, and in accordance with quality standards.
  • Supervise food plating, presentation, and service delivery.
  • Monitor food quality throughout all stages of preparation and service.
  • Ensure compliance with hygiene, sanitation, and food safety regulations.
Kitchen Operations Management
  • Support the Executive Chef in the overall management of kitchen operations.
  • Coordinate daily kitchen activities to ensure smooth and efficient service.
  • Act as the primary point of communication between kitchen and service teams.
  • Maintain kitchen cleanliness and ensure all work areas meet company and regulatory standards.
  • Monitor and maintain kitchen equipment to ensure safe and effective operation.
  • Ensure staff have the necessary tools, equipment, and uniforms to perform their duties.
Inventory and Cost Control
  • Assist with menu costing, stock management, and inventory planning.
  • Monitor stock levels and ensure timely ordering of food and kitchen supplies.
  • Work closely with approved suppliers to maintain quality standards and cost efficiencies.
  • Identify opportunities to minimize waste, reduce spoilage, and improve resource utilization.
  • Prepare inventory reports and support budget management initiatives.
Leadership and Team Management
  • Assume leadership responsibilities in the absence of the Executive Chef.
  • Supervise, mentor, and support chefs and kitchen staff to achieve operational excellence.
  • Foster a positive team culture built on collaboration, respect, and accountability.
  • Provide guidance on food preparation techniques, quality standards, and kitchen procedures.
  • Build and maintain effective relationships with colleagues, suppliers, and stakeholders.
Human Capital Management
  • Support staff development through coaching, mentoring, and training initiatives.
  • Participate in performance evaluations and employee development discussions.
  • Assist with workforce planning and staff scheduling to meet operational requirements.
  • Promote employee engagement and maintain high team morale.
  • Support disciplinary and performance management processes in line with company policies.
Health, Safety and Compliance
  • Ensure compliance with Occupational Health and Safety policies and procedures.
  • Conduct regular checks to identify and mitigate workplace risks.
  • Ensure all kitchen staff are trained in food safety, hygiene, and health and safety requirements.
  • Maintain accurate food hygiene records and compliance documentation.
  • Support environmental health initiatives and regulatory inspections when required.

Requirements

  • Matric qualification preferred.
  • Degree, Diploma, or Certificate in Culinary Arts, Culinary Science, or a related field.
  • Minimum of 3–5 years’ experience as a Sous Chef within a fine dining, hospitality, catering, or commercial kitchen environment.
  • Previous leadership experience managing kitchen teams.
  • Experience preparing function manuals, menu costings, and operational procedures.
  • Own reliable transport.
  • Strong knowledge of food safety, hygiene standards, and kitchen best practices.
